Cooking steps

Cook the rice

  • Rinse the rice to remove excess starch.
  • Boil a large pot of salted water for the rice.
  • Add the rice and cook for 10-12 mins.
  • Drain in a sieve and pop back in the pot.
  • Cover with a lid and leave to the side until ready to serve.

TIP: If you’re in a hurry you can boil the water in your kettle.

Prep the Veg

  • Trim the tip of the broccoli. Cut head into small florets and stem into 2cm pieces.
  • Trim the carrot, then coarsely grate (no need to peel).
Fry the Mince

  • Place a pan over medium-high heat (no oil).
  • Once the pan is hot, fry the mince and carrot with the peri peri spice until mince is browned, 5-6 mins. Use a spoon to break it up as it cooks. Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
  • When 2 mins of cooking time remain, add the broccoli with a splash of water and cover with a lid.
Divide and Serve

  • Divide the rice between bowls, topped with the mince.
  • Drizzle the ranch and chilli oil over the top.
  • Finish with a crumbling of Cashel Blue® cheese.
