Cooking steps

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Roughly chop the olives.
  • Roughly chop the tomatoes.
  • In a bowl, toss together olives, tomato and chorizo. Season with salt, pepper and sugar
Top the Ciabatta

  • Halve your ciabatta. Pop onto a lined baking tray (cut-side up).
  • Spread the sun dried tomato paste over the bread.
  • Top with the chorizo mix and scatter over the cheese.
  • Bake on the top shelf of the oven until the cheese has melted and the edges are starting to crisp, 8-10 mins.
Dish Up

  • Once cooked carefully remove the topped ciabatta from the oven.
  • Pop onto a sharing board and cut into small triangles.
