Cooking steps

Boil the Pasta

  • Boil a large pot of salted water for the linguine.
  • When boiling, add the linguine to the water and bring back to the boil.
  • Cook until softened, 10-12 mins.
  • Once cooked, reserve a cup of pasta water, then drain in a colander and pop back in the pot, off the heat.
  • Drizzle with oil and stir through to prevent sticking.

TIP: If you’re in a hurry you can boil the water in your kettle.

Cook the Salmon

  • Place a pan over high heat with a drizzle of oil.
  • Pat the salmon dry with kitchen paper. Season with half a sachet of oregano (per 2P), the chilli flakes (use less if you don't like spice), salt and pepper.
  • Once the pan is hot, add the salmon fillets, skin-side down.
  • Cook for 4-5 mins, turn over, and cook for 3-4 mins on the other side. IMPORTANT: Wash hands and equipment after handling raw fish. Fish is cooked when opaque in the centre.
Prep the Veg

  • Meanwhile, roughly chop the mushrooms
  • Place a large pot over high heat (without oil).
  • When hot, add the mushrooms to the pot. Season with salt and pepper.
  • Fry until browned, stirring occasionally, until the mushrooms are cooked, 8-10 mins.
Chop the Parsley

  • Meanwhile, roughly chop the parsley (stalks and all).

  • Add the drained pasta to the pot with the mushrooms, stirring until any liquid from the mushrooms is absorbed.
  • Remove the pot from the heat.
  • Add a splash of pasta water, the creme fraiche and truffle zest.
  • Mix well and season to taste with salt and pepper.

  • Divide the mushroom pasta between bowls.
  • Top with the salmon
  • Scatter the cheese and chopped parsley over the top.
