Cooking Steps

Get Prepped

  • Slice the tomato into thin wedges.
  • Trim the cucumber, then quarter lengthways. Chop widthways into small pieces.
  • Toss the cucumber and tomato with the Amarillo chilli paste. Season to taste with salt and pepper. 
Fry the Chicken

  • Slice through the chicken to make thin steaks. Season with BBQ rub, salt and pepper.  IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging. Chicken is cooked when no longer pink in the middle. 
  • Place a large pan over high heat with a drizzle of oil.
  • When hot, add the chicken steaks and cook through, 3-6 mins each side (cook in batches if your pan is getting crowded).
  • Remove from the pan and cover to keep warm.
Cook the Cauli Rice

  • Return the pan to medium-high heat with a drizzle of oil.
  • Once hot, add the cauliflower rice and cook until just soft, 3-4 mins.
  • Season well with salt and pepper. 
Finish and Serve

  • Once the rice is cooked, stir through the chipotle paste, BBQ sauce and knob of butter and gently mix. Season to taste with salt and pepper.
  • Divide the cauli rice between plates and top with the chicken slices.
  • Serve the tomato and cucumber tossed in Amarillo chilli paste alongside.
