Cooking Steps

Roast the Potatoes

  • Preheat the oven to 240°C/220°C fan/gas mark 9.
  • Halve the potatoes lengthways, quartering any larger pieces. Pop them onto a lined baking tray. 
  • Core the apple and chop into 2cm pieces (peeling optional). Arrange next to the potatoes.
  • Drizzle with oil and season with salt and pepper.
  • Roast on the top shelf of the oven until fork tender, 25-35 mins.
Cook the Salmon

  • Mix the cheese and black pepper in a small bowl.
  • Lay the salmon fillets, skin-side up onto a lined baking tray.
  • Spread mayo over the skin and press the black pepper and cheese mix onto it with the back of a spoon.
  • Roast on the middle shelf until cooked through, 10-15 mins. IMPORTANT: Wash hands and equipment after handling raw fish. Fish is cooked when opaque in the middle.
Toss the Salad

  • Meanwhile, roughly chop the tomato.
  • Trim and roughly chop the cucumber.
  • Toss together with the pesto then taste and season with salt and pepper, if required. 
Divide and Serve

  • Once everything is ready, divide the roasted apple and potato between plates.
  • Serve the tossed salad, salmon and any remaining mayo alongside.
