Instructions

Preheat your oven to 220°C/200°C fan/gas mark 7.

In a bowl, whisk the egg, 100 ml milk, 2 tsp sugar and half the cinnamon.

Lay the bacon rashers in a single layer on a lined baking tray and bake on the top shelf of your oven until golden brown and crispy, 10-15 mins. IMPORTANT: Wash hands and equipment after handling raw meat. Cook bacon thoroughly.

Heat 1 tbsp butter in a large pan over medium heat. 
Dip the brioche halves in the egg and milk mixture.

Fry on each side for 7-8 mins or until lightly browned, smashing it in the pan with a spatula.

Arrange the French toast on plates. Add the bacon strips on top and drizzle with maple syrup.

Scatter over the blueberries.
