Cooking Steps

Get Prepped

  • Preheat the oven to 240°C/220°C fan/gas mark 9. Boil a large pot of salted water for the potatoes.
  • Halve the potatoes (quartering larger potatoes).
  • Finely chop the chives (use scissors if you prefer).
  • Drain the halloumi, cut into slices and then into fries. Add to a bowl of cold water.
  • In a bowl, mix the mayo and coleslaw mix together with salt and pepper. Set aside for later.

TIP: If you’re in a hurry you can boil the water in your kettle.

Cook the Pulled Pork

  • Remove all the packaging and pop the pork into an oven dish.
  • Cover with foil and cook on the middle shelf of the oven for 25-30 mins. 
  • Once cooked, remove from the oven, drain any liquid and add the BBQ sauce.
  • Pull apart the pork with the help of two forks. IMPORTANT: Ensure the pork is piping hot all the way through.
Boil the Potatoes

  • When the water is boiling, add the potatoes, lower the heat to medium and cook until fork-tender, 15-20 mins.
  • Once cooked, cool with cold water, then drain in a colander and add to a large bowl.
  • Add the aioli and chives and mix together. Season to taste with salt and pepper. Set aside for later.
Fry the Halloumi

  • Remove the halloumi fries from the cold water and pat dry with kitchen paper. Toss with the paprika and a drizzle of oil.
  • Place a pan (preferably non-stick) over medium-high heat with a drizzle of oil. 
  • Once hot, add the halloumi and fry until golden, 2-3 mins each side.
Finishing Touches

  • Divide the pulled pork evenly between the brioche buns.
  • Pop the buns into the oven to warm, 2-3 mins.
Dish Up

  • Once warmed, top the pulled pork with the coleslaw and close the lids.
  • Serve the halloumi fries and potato salad alongside.
