Cooking Steps

Roast the Sweet Potatoes
1
  • Preheat your oven to 240°C/220°C fan/gas mark 9.
  • Chop the sweet potatoes lengthways into 1cm slices, then chop into 1cm chips (peeling optional).
  • Pop the chips onto a large (lined) baking tray.
  • Drizzle with oil, season with salt and pepper then toss to coat. Spread out in a single layer (you want them well spaced out to achieve a crispy finish).
  • When the oven is hot, roast on the top shelf until golden, 20-25 mins. Turn halfway through.

TIP: Use two baking trays if necessary.

Get Prepped
2
  • Halve the avocado and remove the pit. Use a tablespoon to scoop out the flesh. Thinly slice.
  • Thinly slice the tomato.
  • Place the fish burgers on a lined baking tray. Bake on the middle shelf until lightly golden, 13-15 mins. IMPORTANT: Ensure they're piping hot throughout.
Finishing Touches
3
  • In a small bowl, mix the ketchup and mayo together. Season with salt and pepper.
  • Pop the buns into the oven to warm, 2-3 mins.
Serve
4
  • Spread a layer of the ketchup mayo mix on the bun bases.
  • Top with the sliced tomato and avocado then the fish burgers. Sandwich closed with the top bun.
  • Serve the sweet potato fries alongside with the remaining sauce for dipping.
