  • Preheat your oven (for the tortillas) to 220°C/200°C fan/gas mark 7. 
  • Trim and thinly slice the scallions
  • Peel the mango. Slice down either side of the stone and remove the flesh. Cut any remaining flesh from the stone, then cut the mango into 1cm strips (discard the stone).
  • Add tuna, aioli and scallion to a bowl and mix well. Season to taste with salt and pepper

TIP: To avoid turning on the oven, you can also warm the tortilla in the pan.

Finishing Touches

  • Trim the salad leaves, then chop into bite-sized pieces. Toss with salt, pepper and a drizzle of oil
  • Pop the wraps (one per person) into the oven to warm, 1-2 mins. 
  • Meanwhile, halve the avocado and remove the pit. Scoop the flesh onto a board and chop into chunks.

Divide the tuna salad, salad leaves, mango and avo between the wraps. Fold and serve.
