  • Preheat your oven (for the wraps) to 220°C/200°C fan/gas mark 7. 
  • Trim and thinly slice the scallions
  • Peel the mango. Slice down either side of the stone and remove the flesh. Cut any remaining flesh from the stone, then cut the mango into 1cm strips (discard the stone).
  • Add tuna, ranch and scallion to a bowl and mix well. Season to taste with salt and pepper

TIP: To avoid turning on the oven, you can also warm the wraps in the pan.

Finishing Touches

  • Trim the salad leaves, then chop into bite-sized pieces. Toss with salt, pepper and a drizzle of oil
  • Pop the wraps (one per person) into the oven to warm, 1-2 mins.

  • Divide the tuna salad, salad leaves, mango and smashed avo between the wraps.
  • Drizzle the chipotle paste over the top.
  • Fold and serve.
