Cooking Steps

Cut half the tortillas into triangles (like pizza slices).

Place on a lined baking tray.

Drizzle with oil, season with salt and pepper (to taste) and toss to coat. 

Arrange in a single layer (use two trays if necessary).

Bake in the oven until crispy and golden, 6-8 mins (Keep an eye on them so they don't burn).

Meanwhile, peel and grate the garlic (or use a garlic press).

Roughly chop the tomatoes into small chunks. 

Halve, peel and chop the onion into small pieces.

Quarter the lime. Halve the chilli and discard the core and seeds. Finely chop.

Slice the avocado lengthways. Twist and pull each half apart. Remove the pit and scoop the flesh out into a bowl.

Mash the avocado with a fork then add the and onion, tomatoes, garlic and chilli (use less if you dont like the heat). Season to taste with salt, pepper and lime juice. Serve the tortilla chips and any remaining lime quarters alongside.
