Cooking Steps

Get Prepped

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Trim the carrot, then halve lengthways. Chop into ½ cm semicircles. Peel and chop the sweet potato into 2cm chunks.
  • Halve, peel and finly slice the onion.
  • Trim the tip of the broccoli. Cut head into small florets and stem into 2cm pieces. 
  • Pop the broccoli onto a lined baking tray. Toss with garlic herb seasoning, salt, pepper and a drizzle of oil. Spread out in a single layer. Roast on the top shelf until crispy and slightly charred, 10-15 mins.
Make the Mash

  • Boil a large pot of salted water.
  • When boiling, add the sweet potato and carrots and cook until fork tender, 15-20 mins. 
  • Once cooked, drain in a colander and return to the pot, off the heat.
  • Add a knob of butter and a splash of water or milk.
  • Mash until smooth. Season with salt and pepper. Cover to keep warm.

TIP: If you’re in a hurry you can boil the water in your kettle.

Start Frying

  • Place a large pan over medium-high heat with a drizzle of oil.
  • Once hot, fry the sausages until browned and cooked through, shifting as they colour, 12-15 mins. IMPORTANT: Wash hands and equipment after handling raw meat. Sausages are cooked when browned on the outside and no longer pink in the middle.
  • Remove the sausage from the pan and set aside.

TIP: Cook in batches if necessary.

Make the Onion Gravy

  • Return the pan to high heat with a drizzle of oil.
  • Once hot, add the onion, season with salt and pepper and fry until soft and sweet, 8-10 mins, stirring occasionally.
  • Add the demi glace and a splash of water, cook for 1-2 mins. Season to taste with salt and pepper.
Finishing Touches

  • Mix chipotle to taste into the mash, reserving a plain portion for the kids.
Divide and Serve

  • For the kids, divide the plain mash between plates with the broccoli and sausages alongside.
  • For the parents, serve the chipotle mash and sausages with the broccoli.
  • Finish with a drizzle of onion gravy.
