Cooking steps

Prep the Potatoes

  • Preheat the oven to 240°C/220°C fan/gas mark 9.
  • Halve the potatoes, quartering any larger pieces, and pop onto a lined baking tray. 
  • Toss with oil, half the West African spice mix, salt and pepper.
  • Roast on the top shelf of the oven until fork tender, 25-35 mins.
  • Add the bacon to the tray for the final 10-15 mins. IMPORTANT: Cook bacon thoroughly.
Prep the Rest

  • Halve the bell pepper lengthways and remove the core and seeds.
  • Drain the halloumi then cut into slices (2 per person). Add to a bowl of cold water. 
  • Just before serving, toss the salad leaves with half the mayo and season to taste with salt and pepper. 
Roast the Pepper

  • When the potatoes have 20 mins left, lay the bell pepper, cut side down, on another tray.
  • Drizzle over a little oil, season with salt and pepper and roast in your oven for the remainder of the potato cooking time, 20 mins.

TIP: You want the pepper to go soft and slightly charred at the edges.

Fry the Halloumi

  • Remove the halloumi slices from the cold water and pat dry with kitchen paper.
  • Toss the halloumi with a large pinch of the remaining West African spice mix.
  • Place a pan (preferably non-stick) over medium-high heat with a drizzle of oil.
  • Once hot, add the halloumi and fry until golden, 3-4 mins each side.
Finishing Touches

  • Remove the halloumi pan from the heat.
  • Drizzle in half the honey, the chilli flakes (use less if you don't like spice) and a knob of butter.
  • Carefully turn the halloumi slices to coat in the sauce.
  • Pop the buns into the oven to warm, 2-3 mins.
Finish and Serve

  • To assemble the burgers, spread a little of the remaining mayo on the cut side of each bun.
  • Top with bacon slices, the roasted pepper, sandwiched between halloumi slices.
  • Drizzle with the remaining honey, then pop the bun lid on top.
  • Serve with roasted potatoes and salad alongside.
