Cooking Steps

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Quarter the lemon.
  • Halve the kiwi and use a spoon to scoop out the flesh. Cut into 2cm chunks.
  • Pop the cream cheese, creme fraiche and squeeze of lemon juice
  • into a bowl..Season to taste with salt and pepper.
  • In another bowl, whisk 1 egg, 100ml milk, 2 tsp sugar and half the cinnamon.
  • Place a pan over medium-high heat with a drizzle of oil.
    Once the oil is hot, fry the bacon lardons until golden, 5-7 mins, stirring occasionally. IMPORTANT: Wash hands and equipment after handling raw meat. Cook lardons thoroughly. Set aside and keep covered.

  • Return the pan to a medium heat with 1 tbsp butter
  • Dip the brioche buns in the egg and milk mixture.
  • Fry on each side until lightly browned, 7-8 mins. Use a spatula to press down while in the pan.
  • Meanwhile, halve the bagels (1 per person, you can save the rest for use later). 
  • Toast in your toaster. Alternatively, toast in the oven for 4-6 mins.

  • Once toasted, pop the bagel onto your plates and spread with the cream cheese.
  • Pull the smoked salmon apart and layer on top of the cream cheese
  • Enjoy open-faced or sandwiched closed—it's up to you!
  • Arrange the French toast next to the smoked salmon bagels with remaining lemon wedges.
  • Top withfrench toast with the bacon lardon, chopped kiwi and drizzle over the maple syrup.
