  • Preheat oven to 220°C/200°C fan/gas mark 7.
  • Quarter the lemon. Halve the kiwi and scoop out the flesh. Cut into 2cm chunks.
  • Add cream cheese, creme fraiche and a squeeze of lemon juice to a bowl. Season with salt and pepper.
  • In another bowl, whisk 1 egg, 100ml milk, 2 tsp sugar and half the cinnamon.
  • Place a pan over medium-high heat with a drizzle of oil. Fry bacon for 5-7 mins. IMPORTANT: Wash hands and equipment after handling raw meat. Cook lardons thoroughly. Remove from pan once cooked.
Make the French Toast

  • Return the pan to a medium heat with 1 tbsp butter
  • Dip the bread slices in the egg and milk mixture.
  • Fry on each side until lightly browned, 7-8 mins. Press down with a spatula while in the pan.
  • Meanwhile, halve the bagels (1 per person, save the rest for use later). 
  • Toast in your toaster or in the oven, 4-6 mins.

  • Spread the bagels with the cream cheese.
  • Pull the smoked salmon apart and layer on top.
  • Arrange the French toast next to the bagels with remaining lemon wedges. Top with bacon and kiwi.
  • Drizzle the maple syrup over the top.
