Cooking Steps

Cook the Rice

  • Rinse the rice to remove excess starch. Peel and grate the garlic (or use a garlic press).
  • Boil a kettle or pot of salted water for the rice.
  • Add the rice and cook for 10-12 mins. 
  • Drain in a sieve and pop back in the pot. Cover with a lid and leave to the side until ready to serve.
  • Once cooked, stir through peas, soy sauce and half the garlic.
Get Prepped

  • Trim the carrot, then coarsely grate (no need to peel).
  • Roughly chop the coriander (stalks and all).
  • Trim the end of the baby gem. Peel apart the in-tact leaves. These will be your lettuce cups!
Start Frying

  • Place a pan over medium-high heat (no oil).
  • Once the pan is hot, fry the mince and carrot until browned, 5-6 mins. Season with the Thai spice and remaining garlic.
  • Use a spoon to break it up as it cooks.  IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
Dish Up

  • Divide the fried rice between plates.
  • Fill the lettuce cups with the yuk sung.
  • Drizzle over the hoisin sauce.
  • Scatter the coriander over the top.
