Cooking Steps

Make the Mash

  • Preheat your oven to 240°C/220°C fan/gas mark 9. Boil a large pot of salted water for the potatoes.
  • Chop the potatoes into 2cm chunks (peeling optional).
  • Add the potatoes to the boiling water and cook until fork-tender, 12-18 mins. 
  • Once cooked, drain in a colander and return to the pan off the heat. Add a knob of butter and a splash of milk or water. 
  • Mash until smooth. Season with salt and pepper. Cover to keep warm.

  • Trim the carrot, then quarter lengthways (no need to peel). Chop widthways into small pieces.
  • Halve, peel and chop the onion into small pieces.
Time to Fry

  • Place a plan over high heat with a drizzle of oil.
  • Once the pan is hot, add the carrot and onion and fry until softened, 4-5 mins.
  • Add the mince and fry until browned, 5-6 mins. Use a spoon to break it up as it cooks. Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
Add the Flavour

  • Stir the passata, Central American spice, Worcester sauce, red wine jus, a pinch of sugar and 75ml water (per 2P) into the mince.
  • Simmer for 3-4 mins. Season to taste with salt and pepper.
Build and Bake

  • Transfer half the mash to a large oven dish and evenly spread in a layer along the bottom of the dish.
  • Spoon on the spiced mince mixture, and smooth into an even layer, then top with a final layer of the remaining mash.
  • Scatter the cheese over the mash topping, then pop into the oven until the cheese is melted and golden, 8-10 mins.
Divide and Serve

  • Share the escondidinho de carne between bowls.
  • Serve the salad leaves on the side with a drizzle of oil.
