Cooking steps

Get Prepped

  • Halve, peel and thinly slice the shallot.
  • Halve the bell pepper and discard the core and seeds. Cut into 2cm chunks.
  • Strip the leafy part of the kale from the stem. Discard the stems.
  • Peel and grate the garlic (or use a garlic press). Drain and rinse the beans in a sieve.
Fry the Veg

  • Place a large pan over medium-high heat with a drizzle of oil.
  • Once hot, add the shallot and bell pepper and fry until soft, 4-5 mins.
Add the Chicken

  • Add the chicken to the pan and fry until browned, 5-6 mins. Season with salt and pepper.
Add the Sauce

  • Add the garlic, chopped tomatoes, paprika, cumin, Worcester sauce, beans, smoky base paste, honey and a splash of water.
  • Stir through the kale.
Simmer the Sauce

  • Lower the heat to medium-low and simmer until the chicken is cooked through, 8-10 mins. IMPORTANT: Wash hands and equipment after handling raw chicken and its packaging. Chicken is cooked when no longer pink in the middle.
  • If the stew is a little too thick, add a splash of water and stir to combine.
  • Season to taste with pepper.
Divide and Serve

  • Divide the chicken campfire stew between bowls.
