Cooking Steps

Roast the Potatoes
1
  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Pick the rosemary and roughly chop (discard the stalks).
  • Cut potatoes into thick wedges.
  • Toss potatoes and rosemary with a drizzle of oil, salt and pepper.
  • Pop the wedges onto a large (lined) baking tray. Spread out in a single layer. When the oven is hot, roast on the top shelf until golden, 25-35 mins. Turn halfway through.

TIP: Use two baking trays if necessary.

Fry the Turkey
2
  • Place a pan over medium-high heat with a drizzle of oil.
  • Once hot, fry the turkey until browned, 5-8 mins each side. Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw turkey and its packaging. Turkey is cooked when no longer pink in the middle.
  • Remove from the heat and toss with the black garlic paste.
Toast Your Buns
3
  • Pop the buns into the oven to warm through, 2-3 mins.
  • Thinly slice tomato.
  • Stir together pesto and mayo in a small bowl.
Finish and Serve
4
  • Spread pesto mayo over cut sides of buns.
  • Top with salad leaves, turkey and tomato slices.
  • Divide between plates and serve potato wedges alongside.
