Preheat your oven to 220°C/200°C fan/gas mark 7.
Cut the tomato into thin slices.
Trim the cucumber, then halve lengthways. Chop into roughly 1cm wide, 5cm long batons.
Drain and tear the mozzarella.
In a small bowl, mix the mayonnaise with the pesto.
Pop the baguettes into the oven to warm through, 2-3 mins.
Spread â…” of the pesto mayonnaise on each half of the bread.
Divide the mozzarella between the bases of the bread, then the ham and a few slices of tomato.
Season generously with pepper and then close the sandwiches with the top halves.
Wrap the sandwiches in baking paper or cling film.
Serve Italian baguettes in boxes.
Serve with cucumber, any remaining pesto mayonnaise and one apple per person.
