Get Prepped

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Cut the tomato into thin slices. 
  • Trim the cucumber, then halve lengthways. Chop into roughly 1cm wide, 5cm long batons.
  • Drain and tear the mozzarella.
  • In a small bowl, mix together the mayo and pesto.
Assemble the Sandwich

  • Pop the baguettes into the oven to warm through, 2-3 mins.
  • Spread the pesto mayo over the cut side of the bread (reserve ⅓ for later). 
  • Divide the mozzarella between the two baguette bases, then layer on the ham and a few tomato slices.
  • Season generously with cracked black pepper and sandwich closed with the baguette lids.
  • Wrap the sandwiches in baking paper or cling film.

  • Halve the baguettes widthways.
  • Serve in boxes with cucumber batons, remaining pesto mayo and an apple alongside.
