Cooking steps

Get Prepped
1
  • Peel and grate the garlic (or use a garlic press).
  • Peel and grate the ginger (use a teaspoon to easily scrape away the peel).
  • Halve, peel and thinly slice the onion.
  • Quarter the lime. Trim the green beans.
  • Trim the carrot, then halve lengthways (no need to peel). Chop into roughly 1cm wide, 5cm long batons.
Fry the Veg
2
  • Place a pan over medium-high heat with a drizzle of oil.
  • Once the pan is very hot, sear the beef strips until cooked through, shifting as they colour, 2-3 mins. IMPORTANT: Wash hands and equipment after handling raw meat and its packaging.
  • Remove once cooked.
  • Fry the carrot and green beans until starting to char, 4-5 mins.
Add the Onion
3
  • Add the garlic, ginger and onion to the pan with another drizzle of oil.
  • Fry until onion is softened, stirring regularly, 4-5 mins.
Cook the Noodles
4
  • Carefully separate the noodles.
  • Add them to the pan with the veg.
  • Cook until warmed through, 1-2 mins.
Make the Sauce
5
  • Add the beef, hoisin sauce and soy sauce to the pan.
  • Carefully toss everything together to coat in the sauce.
  • Season to taste with salt, pepper and lime juice.

TIP: Add a splash of water if you feel the sauce needs loosening.

Finish and Serve
6
  • Divide the hoisin beef noodles between deep plates or bowls.
  • Serve any remaining lime wedges alongside for squeezing over.
