Cooking Steps

Get Prepped

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Peel the ginger and chop half into ½ cm thin matchsticks. Grate the remaining ginger. 
  • Peel and grate the garlic (or use a garlic press).
  • Halve the chilli and discard the core and seeds. Finely slice. 
  • Roughly chop the coriander (stalks and all).
Cook the Prawns

  • Place a pan over medium-high heat with a drizzle of oil.
  • Once hot, add prawns, garam masala, grated ginger and chilli (use less if you'd like things milder). Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw prawns and their packaging. Prawns are cooked when pink on the outside and opaque in the middle.
  • Fry until cooked, 4-5 mins.
  • Add chopped tomatoes and a generous splash of water. Cook until thickened, 4-5 min. Season to taste with salt, pepper and sugar.
  • Stir through half the yoghurt. 
Finishing Touches

  • In a small bowl, combine the garlic, half the coriander, and a drizzle of oil.
  • Place the naans onto a baking tray. Brush with the herby garlic oil then pop into the oven to warm through, 2-3 mins. 
  • Mix together the remaining coriander and yoghurt. Season to taste with salt and pepper.
Divide and Serve

  • Divide the prawn karahi between shallow bowls.
  • Top with ginger matchsticks.
  • Serve with garlic naan and yoghurt on the side.
