Cooking Steps

  • Preheat your oven to 220°C/200°C fan/gas mark 7. Boil a large pot of salted water for the potatoes.
  • Pop the sausages onto a lined baking tray.
  • When the oven is hot, bake on the middle shelf until golden brown and cooked through, 20-25 mins.
  • Turn halfway through. IMPORTANT: Wash hands and equipment after handling raw meat. Sausages are cooked when no longer pink in the middle.
Mash the Potatoes

  • Chop the potatoes into 2cm chunks (peeling optional).
  • Add the potatoes to the boiling water and cook until fork tender, 12-18 mins.
  • Once cooked, drain in a colander and return to the pot off the heat.
  • Add a knob of butter and a splash of milk or water.
  • Mash until smooth. Season with salt and pepper. Cover to keep warm. 
Cook the Broccolini

  • Meanwhile, when your sausages have about 15 mins left in the oven, add the broccolini to another lined baking tray.
  • Drizzle on a little oil and season with salt and pepper.
  • Roast for the remaining time, 12-15 mins. 
Caramelize the Onions

  • Meanwhile, halve, peel and thinly slice the onion
  • Place a large pan over medium-high heat with a drizzle of oil.
  • Once hot, add the onion, season with salt and pepper and fry until soft and sweet, 8-10 mins, stirring occasionally.
  • Add the balsamic vinegar and a pinch of sugar and cook until the balsamic has evaporated, 1-2 mins.
Simmer the Sauce

  • Add the red wine jus to the onions and allow to warm through. 
  • Stir though a knob of butter and a splash of water if required.
  • Season to taste with salt and pepper.

  • Plate the sausages on top of a generous helping of mash.
  • Spoon over some rich onion gravy.
  • Serve the broccolini alongside.
