  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Halve your ciabatta lengthways.
  • In a small bowl, combine the tomato paste, sundried tomato paste, 100ml water, 1 tsp sugar and half the Italian herbs.
  • Quarter the tomatoes.
  • Drain and tear the mozzarella.
Bake the Ciabatta

  • Pop the ciabatta onto a lined baking tray (cut-side up).
  • Spread the tomato paste mix onto the cut sides of the ciabatta and top with the tomatoes and mozzarella.
  • Sprinkle over the remaining Italian herbs and season with salt and pepper.
  • Bake on the top shelf of your oven until the cheese has melted and the edges are starting to crisp, 8-10 mins.
Dish Up

  • Once cooked carefully remove the ciabatta from the oven.
  • Pop onto a sharing board and cut into small triangles.
