Cooking Steps

Get Prepped

  • Trim and halve the green beans. 
  • Trim the carrot, then slice into 1cm rounds (no need to peel).
  • Peel and grate the garlic (or use a garlic press).
  • Zest and halve the lime.
  • Drain the sweetcorn in a sieve.
Make the Rice

  • Rinse the rice to remove excess starch.
  • Pour 300ml cold water (per 2P) into a medium pot with a tight-fitting lid.
  • Stir in the stock and rice and bring to the boil.
  • Once boiling, lower the heat to medium and cover with the lid.
  • Leave to cook for 12 mins, then remove the pot from the heat (still covered) and leave to the side for another 12 mins or until ready to serve (the rice will continue to cook in its own steam).
Fry the Mince

  • Place a large pan over medium-high heat (no oil).
  • When the pan is hot, add the mince and cook until browned, 5-6 mins. IMPORTANT: Wash your hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
  • Use a wooden spoon to break it up as it cooks.
Add the Veg

  • Add the green beans and carrot and fry for 2-3 mins.
  • Stir in the garlic and cook for 1 min.
  • Add 100ml water (per 2P) and cover with a lid or some foil. Allow to cook until the green beans are just tender 5-7 mins. 
Finishing Touches

  • Stir through the sweetcorn, hoisin sauce, soy sauce, peanut butter and ½ tsp sugar (per 2P). Add lime juice to taste.
  • Add a splash of water to loosen the sauce if necessary.
  • Remove from the heat, taste and season with salt, pepper and sugar if necessary.
  • Fluff up the rice with a fork and stir through the lime zest.
Serve and Enjoy

  • Divide the lime rice between bowls.
  • Serve the hoisin mince on top with any remaining lime, cut into wedges.
