Water
Trim the green beans.
Peel and grate the ginger. Use a teaspoon to easily scrape away the peel.
Trim and thinly slice the scallion. Peel and grate the garlic (or use a garlic press).
In a bowl mix the peanut butter with sesame oil, soy sauce and 100ml warm water (per 2P).
Place a pan over medium-high heat with a drizzle of oil.
Once the pan is hot, add the green beans and fry until starting to char, 2-3 mins. Stir in the garlic and ginger and cook for 1 min.
Add the peanut sauce to the pan. Bring to a simmer for 1-2 mins. Then, gently break the udon noodles into the pan and cook for 2-3 mins. Add the edamame beans and allow everything to warm through. Season to taste with salt and pepper.
Tip: Add a splash of water, if required to loosen the sauce.
Divide the udon noodles with the peanut sauce. Scatter over the sliced scallion and dried chilli flakes (as much as you'd like).
