Instructions

  • Preheat the oven to 220 degrees.
  • Cut the onion into half rings.
  • Heat 1/2 tbsp butter per person in a pan on medium-low heat and fry the onion for 6-8 minutes. Deglaze with the balsamic vinegar.
  • Then add the cranberry chutney and  2tbsp water. Mix well and let simmer for 1 minute, then remove from heat and keep aside.

  • Slice the bread and place on a baking sheet lined with baking paper. Sprinkle with oil and season with salt and pepper.
  • Bake the bread in the oven for 5-7 minutes.
  • Spread the goat cheese on a second baking sheet lined with baking paper. Sprinkle with honey and sprinkle with hazelnuts. Bake the goat cheese for 3-4 minutes.

  • Peel the apple and cut into cubes. Cut the cucumber into cubes.
  • In a salad bowl, mix the oil with the balsamic vinegar.
  • Add the apple, cucumber and lettuce. Season with salt and pepper. Mix well.

  • Divide the salad over the plates. Serve the fried goat cheese on top.
  • Garnish with the caramelized onion sauce.
  • Serve the crostini on the side.
